Friday, I spent a good part of the day scrap-booking with my Sister-in-law, my wedding scrap-book is coming along. I'll have to share pictures when I get a chance. We were going to a barbecue that night so I volunteered to bring a dessert. I used to bake a lot in Jr. High but now most of what I cook are dinner dish. All my old yummy baking recipes are at my parents house. So I hit the internet:
I found what sounded like a delicious recipe...
3 c. Bisquick baking mix
1 c. sugar
1 c. water
1 (3 3/4 oz.) pkg. instant pudding and pie filling (any flavor)
1/2 c. vegetable oil
4 eggs
Heat oven to 350 degrees. Grease and flour 12-cup bundt cake pan. Beat all ingredients in large bowl on low speed, scraping bowl constantly, 30 seconds. Beat on medium speed, scraping bowl constantly, 4 minutes. Pour into pan. Bake until wooden pick inserted in center comes out clean, 40-45 minutes. Cool 10 minutes, remove from pan. Cool completely.
Spread with Glaze and, if desired, sprinkle with chopped nuts.
GLAZE:
Mix 1 cup powdered sugar and 1 to 2 tablespoons milk until smooth and of desired consistency.
And got cooking...
It was yummy =] except for the fact that it was a bit dry. Trey and our friends said it wasn't but they're polite ;] If you make it add a bit more oil.
